By beforehand short-term (10 min) and long (30 min) frying at 200 ˚С, and also 5 and 12 hour heat treatments of raw materials of a camomile and leaves, and also bark of an oak prepared extracts. It is shown that heat treatment of medicinal plant tissues leads to chemical changes of composition, including formation of products of Maillard - Amadori.
