The paper presents the data of the developed technology for the processing of medicinal plants. As a result of the new technology, it became possible to preserve the quality of dried raw materials and obtain medicinal tea. There were comparative works of plants Chinese Camellia and fireweed plant. They are both rich in polyphenols and enzymes that accelerate the oxidative transformation of the former. The original most bioactive monomeric units in black tea almost do not remain, and its therapeutic antitumor properties, respectively, are lower than those of green tea. Independent transformations of epoetin B in fresh fireweed, on the contrary, lead to a qualitatively similar composition of pharmaceutical fireweed and fireweed. Dependences describing the effect of fermentation temperature on organoleptic indicators were studied. This technology makes it possible to preserve the antioxidant properties of the resulting final product in maximum quantities.
