Soybean seeds are an important raw material for the production of functional food and feed products. This study evaluates the effect of protein, oil and carbohydrate composition of soybean seeds on processing efficiency. The research was conducted in 2023–2025 using seeds of Toyopro, Fora, Ilhom-6 and Sulton-6 varieties grown under the conditions of the Samarkand region. Protein content ranged from 36 to 40 %, while the processing efficiency index (KTA) varied between 72 and 82. A very strong positive correlation was found between protein content and KTA (r = 1.00). The results confirm the decisive role of protein content in determining the processing efficiency of soybean seeds.
