Listeriosis is an infectious disease that occurs in humans and animals, provoked by the bacteria Listeria monocytogenes. In nature, it has 18 different species, 3 species for human (Listeria monocytogenes, Listeria ivanovii and Listeria innocua) is patogen. Cases of infection with listeriosis in a person can occur when eating infected livestock products (milk, meat, cheese, ice cream), poultry products, vegetables, salads, as well as seafood, etc., consumed without adequate processing with heat. This disease affects the liver, lungs, central nervous system, lymph nodes, spleen tissues. Listeria are resistant to various physical and technological effects, including low temperature effects, which are stored for a long time in all objects of the environment.
