The article discusses the principle and essence of constructing a production line for the production of dried melon, which provides a systematic integrated approach and production continuity based on a number of developed and tested technical means: peeling machine for melon, unit for cutting melon into ring slices, a chain and chain dryer, and others flexible technological systems.
