During the study of the biometric characteristics of lemon fruits, it was found that on average the majority is pulp (63%), and the remainder is peel (35%) and seeds (2%). This emphasizes the high consumer value of lemon fruits, as well as the potential for the production of secondary products (pectin, essential oils) useful for the processing industry.
