Black chokeberry (Aronia melanocarpa) is a polyphenol-rich berry whose industrial value depends strongly on processing. This integrative review evaluates peer-reviewed evidence published from 2019 through July 2026 on juice extraction and clarification, nonthermal stabilization, drying, phenolic extraction, encapsulation, and by-product valorization. The evidence does not support one universally superior technology; selection should follow the target product and the quality attribute being protected or recovered. Pulsed electric field pretreatment can increase juice yield and phenolic release, while thermosonication and high hydrostatic pressure can preserve juice color and bioactive compounds more effectively than severe thermal treatment under the studied conditions. Membrane clarification is mild but remains limited by fouling and cleaning. Freeze-drying provides strong retention of heat-sensitive compounds in premium powders, whereas spray drying is better suited to continuous production when carrier systems are optimized. Ultrasound-assisted, pressurized, enzymatic, deep-eutectic-solvent, and accelerated-solvent methods can improve recovery from pomace, although optimum conditions are compound-specific. Major research needs include microbial validation, sensory testing, scale-up, energy use, and techno-economic assessment. For Uzbekistan, the reviewed technologies should be treated as candidates for local pilot validation rather than as already proven industrial solutions.
