This article reflects the optimal parameter indicators of freezing and drying in the process of experimenting with new energy-efficient, improved vacuum-sublimation drying equipment developed by the researchers. Based on the results of the study, it was studied that while the total energy and operational consumption in this method is higher than in other freezing and drying methods (except dielectric drying), in this process the product retains almost 98% of its vitamins and practically does not change its appearance.
