Ushbu maqolada oziq-ovqat mahsulotlari sifatini boshqarish tizimida metrologik xavflarni aniqlash va baholash masalalari ko‘rib chiqildi. Oziq-ovqat xavfsizligi tizimlarida o‘lchash noaniqliklari mahsulot sifati va iste’molchi salomatligiga bevosita ta’sir qilishi sababli, metrologik xavf tahlili modeli ishlab chiqildi. Modelda o‘lchash vositalarining aniqligi, laboratoriya sinovlari, operator xatolari va tashqi muhit omillari hisobga olindi. Tadqiqot natijalari ISO 22000, HACCP va ISO/IEC 17025 standartlari asosida metrologik xavflarni minimallashtirish imkonini beradi В данной статье рассма триваются вопросы выявления и оценки метрологических рисков в системах управления качеством пищевых продуктов. Поскольку неопределённости измерений в системах безопасности пищевых продуктов напрямую влияют на качество продукции и здоровье потребителей, была разработана модель анализа метрологических рисков. Модель учитывает точ ность измерительных приборов, лабораторные испытания, ошибки операторов и факторы внешней среды. Результаты исследования позволяют минимизировать ме трологические риски в соответ ствии со стандартами ISO 22000, HACCP и ISO/IEC 17025. This article examines the issues of identifying and assessing metrological risks in food quality management systems. Since measurement uncertainties in food safety systems directly affect product quality and consumer health, a metrological risk analysis model was developed. The model takes into account the accuracy of measuring instruments, laboratory tests, operator errors, and environmental factors. The research results allow minimizing metrological risks in accordance with ISO 22000, HACCP, and ISO/IEC 17025 standards.
