Бухоро ҳолвагарлик ҳунари анъаналари

The article analyzes one of the ancient crafts of Bukhara, halvagar, its history, customs and traditions, as well as the rituals associated with it, based on scientific literature and field ethnographic materials. The types and names of halva, the process of its preparation, and its beneficial properties were discussed in detail. In this craft, the traditions of the master-apprentice, the peculiarities of training and the ceremonies held in honor of the feast are especially clearly expressed. Although 72 types of halva were prepared in Bukhara throughout history, some of them have survived to this day. They were lost because the methods of production and materials of those who received them were not recorded, as well as due to the consequences of colonial policy and the production of only certain products in large factories. The article presents the maximum possible amount of information about modern types of halva.
