Amino acid composition and water permeability of spotted areas of cocoons

This article presents the results of a study on the amino acid composition of various parts of high-quality and defective silkworm cocoons, as well as the effects of pressure and temperature on their water permeability. The influence of the surfactant preparation ShK on water permeability was also investigated. The amino acid composition of sericin extracted by dissolution from both high-quality and defective cocoons was analyzed during the experiments. It was found that the content of proline, alanine, valine, isoleucine, and leucine—amino acids with hydrophobic R-groups—was increased in defective cocoons, while the levels of threonine, serine, glycine, and tyrosine—amino acids with polar R-groups—were reduced. The study of the effects of pressure and temperature on the water permeability of high-quality and defective cocoons revealed that an increase in temperature leads to greater swelling of the cocoons, while water permeability decreases. It is known that good evaporation and reeling of the cocoon are closely related to the efficient and rapid penetration of water into its structure. Water passes through different parts of the cocoon shell in varying amounts, indicating differences in shell thickness and density. In addition, water permeability is influenced by the hydrophobicity of the cocoon surface and the degree of oiliness that forms during storage. At a pressure of 78.46 kPa, the water permeability of defective cocoon parts was found to be lower than that of high-quality cocoons. The addition of the surfactant ShK to the solution resulted in uniform evaporation in both high-quality and defective cocoons.
